Ensaladang Crispy Dilis Dilis is a small anchovy-like fish found in abundance in the seas around the Philippines. Usually dried under the hot sun, Dilis is simply salted and fried into crispiness and mixed with an uncomplicated medley of salted eggs and freshly sliced small Filipino tomatoes and Bombay onions. A vinegar sauce and plain piping-hot rice tops the taste buds.
